Labor Day Beet Burger Recipe

Labor Day is coming up next Monday. What better way to celebrate than by grilling up some regenerative meat? Here's a delicious beet burger recipe that the whole family will enjoy!

The recipe below is for six to eight patties.

Ingredients:

2 pounds 80/20 verified regenerative beef (we got Thousand Hills from our local Natural Grocers)

3 medium beets

Figure Ate Persimmon Vinegar (or vinegar of choice) 

3 cloves fresh garlic, minced

Salt and pepper for seasoning

For serving: buns or sourdough bread, salt, pepper, goat cheese, avocado, red onion

Directions: 

Wash beets. Place them in a pot and cover with water. Bring water to a boil and then bring down to a simmer. Cover and simmer for 40 minutes.

Once beets are easy to pierce with fork. Remove from boiling water. Remove skins (they should come off easily. Once cool to the touch, grate beets.

Add beef to beet shred and mix. Add a dash of vinegar along with fresh garlic, salt, and pepper.

Heat the grill. While it's heating up, form your patties into palm-sized rounds.

Place patties on the grill for about 4 minutes per side. Your cooked patties will have a lovely pink hue thanks to the beets.

Enjoy these nutrient-dense burgers with goat cheese, avocado, or toppings of choice!
